Barley is a major food and feed crop used as a raw material in cereals, flour, animal feed, pharmaceuticals, cosmetics and the brewing industry. Barley kernels contain 13 % protein, 6 % carbohydrates, 5.5 % fiber and 2.1 % fat. Barley protein is more valuable than wheat protein, especially in its lysine content.
